Hello! Today I want to share with you a simple but delicious recipe.
Makes 4 servings
Ingredients:
1/2 red onion diced in small cubes
2 garlic cloves finely chopped
2 chipotles finley chopped
2 tomatoes diced in cubes
1 cup of tomato puree
2 cups of cooked beans
1 cup of chicken stock
salt and pepper to taste
avocado, cheese, fresh coriander and lime to garnish
Preparation:
In a pan fry the onion and garlic for a couple of minutes, add the chipotles and the tomatoes and fry for one more minute, then add the tomato puree, the beans and the chicken stock and let it boil for 10 minutes.
And that's it! your soup is ready to enjoy now you can garnish with the avocado, cheese, coriander and lime.
